Margarita's International Recipes
I have to confess that I completely messed up this dish. I don't really know how, they were , but the pancakes formed a golden crust on the outside without the middle cooking. That meant that it was impossible to flip them, they just made a mess. The flavor, specially of the golden crust, was great – but only one of my pancakes looked good enough to photograph. I tried both deep frying them and frying them in a little bit of oil.
- 6 soft bananas
- 1 cup flour
- 1/4 cup sugar
- 1/2 tsp nutmeg
- oil for frying
Mash bananas. Add the flour. Dissolve the sugar in 1/4 cup of water. Add nutmeg and mix well. Add water and mix until the batter has the consistency of pancake batter.
Heat oil in a wide skillet over medium heat. Pour 1/4 cup batter on the pan and cook until golden brown, flip and repeat.
