I probably should not be surprised at how unsuccessful my journey into Ecuadorian cuisine was. After all, I spent a few weeks in Ecuador many years ago, and while I fell in love with the beautiful and multifaceted country, I didn't find its cuisine to be particularly memorable (with the exception of grilled cuy). But I found a beautiful blog online written by an Ecuadorian transplant who clearly loves her cuisine and I was inspired. Alas, I don't remain so.

Ecuadorian cuisine, like most Latin American cuisine, is a product of a mixture of native and European traditions, and the dishes I made were an example of that. I made two different meals on different nights.
