Gascony is located in the southwestern corner of France, bordering the Atlantic and the mountains. The cuisine is hardy, heavy on goose and duck fat. The region is famous for its foie gras and its Bayonne ham. The recipes I explored, however, were far more humble: roast chicken, beef stew and apple pie. Two of them were great in their simplicity, the other just OK.
