Bolinhos de mancarra com peixe Fish & Peanut Balls
Fish & Peanut Balls
Ingredients
- 2 1/2 onions
- 2 lbs tilapia
- 3 Tbsp lemon juice
- 2 tsp salt, divided
- dash of pepper
- vegetable oil
- 5 sprigs parsley, chopped
- 1 cup finely chopped peanuts
- 1 egg
Directions
Thinly slice the onion half, grate the other two onions and set aside
Place tilapia in a shallow bowl, add lemon juice, 1 tsp. salt and pepper and the sliced onion. Marinate for 30 minutes.
Pour a thin layer of oil onto a saute pan and heat over medium-high heat. Add the tilapia and saute until cooked through, flipping half way. Transfer onto paper towells and let cool.
Flake the tilapia into a bowl. Add the reserved grated onions, parsley, peanuts, egg and the remaining teaspoon of salt. Mix well and shape into balls. Deep fry the balls until golden.
