Haitian Rice & Beans

As the name suggests, Riz National - or rice and kidney beans - is Haiti's national dish. Indeed, rice and beans can be considered the staple food of much of Central America and the Caribbean. I didn't find this particularly version remarkable, but it does provide for a satisfactory meal or side.


Riz National

Ingredients

  • 2 Tbsp. olive oil
  • 1 onion, chopped
  • 3 garlic cloves, minced
  • 1 green bell pepper, chopped
  • 1 cup uncooked rice
  • 2 cans kidney beans, drained
  • 1/2 tsp cumin
  • 1/4 tsp salt
  • 1/4 tsp oregano
  • 1/4 tsp crushed red pepper flakes
  • 2 1/2 cups water

Directions

Preheat oven to 350°F.

Heat oil over medium heat in a large frying pan. Add onions, garlic and green pepper and saute until tender. Set aside.

Combine rice, beans, seasonings and waters in a large mixing bowll. Add water and mix well. Add onion mix and well again. Pour into an oven-safe casserole dish, cover and bake until all the liquid is absorved and the rice is tender, about an hour. Sitr and serve.
