Hangzhou is one of China's largest cities - with over 9 million residents. Its cuisine is said to be "fresh, tender, soft, and smooth, with a mellow fragrance," and it favors sweet over savory flavors. Many of its dishes are based on the fish of the West Lake - which obviously I couldn't prepare. Some of its most famous dishes, such as beggar's chicken, are quite elaborate - I focused on easier ones.

Chinese cuisines I've explored so far: Cantonese, Chengdu, Chinese Muslim, Dai, Fujian, Ghizhou, Hakka, Hangzhou, Hongkonese, Huaiyang, Imperial China, Indo-Chinese, Jiangsu
