Grilled Hong Kong Style Chicken Wings

People in Hong Kong seem to be very fond of barbecuing, but for what I've seen online, they mostly grill meat without much in the way of marinades or condiments. This recipe, from the Barbecue Bible - a very good book that includes recipes from around the world to cook on the grill - was at least marinated. I'm not sure how authentic it is, but I figure most Asian barbecue dishes are very good and Hong Kong being an international city, this may be as well.

Alas, I was pretty disappointed. They just weren't very flavorful. Perhaps I didn't marinate for long enough or I didn't coat them enough on the sauce as I grilled them, though I think probably the biggest problem is that I didn't salt them. You may want to do that. Still, with so many great Asian barbecue recipes, I'll probably not make these again.

Grilled Hong Kong Style Chicken Wings

Ingredients

  • 3 lbs chicken wings
  • 1/2 cup soy sauce
  • 1/3 cup honey
  • 1 Tbsp fresh ginger, minced
  • 3 cloves garlic, minced
  • 3 green onions, chopped
  • 2 tsp Chinese five-spice powder

Directions

Rinse wings and pat dry. Make three deep cuts in the meaty part of each wing. Set aside.

In a large bowl whisk together the soy sauce, honey, ginger, garlic, green onions and the five-spice powder. Pour half of the sauce into a small bowl, cover and refrigerate. Add wings to the sauce in the large bowl and coat on all sides. Cover the bowl and refrigerate for 6 to 24 hours.

Preheat the grill to medium-high and brush with oil.

Remove the wings from the marinade and thread each on a skewer on three different spots.

Direct grill for about 12 minutes, turning every so often and basting with the reserved sauce on them. Continue grilling for 3 more minutes without basting. Carefully remove from skewers and serve.
