Iraqi cuisine dates back five thousand years or more to the time of the Sumerians. Over time, it has been influenced by the cuisines of its neighbors, mainly Iran, Turkey and Syria. It is characterized by the use of whole grains - including some, like bulgur and farro that are out of fashion in the US -, nuts, dried fruits and aromatic spices.

As a fan of Middle Eastern cuisine in general, I made several Iraqi recipes and was overall pleased with the experience.
