The Kachin people, called Jingpo in China, live in the Kachin hills, located in a region that encompasses parts of northern Myanmar, China's Yunnan province and Arunachal Pradesh in India's Assam. They are divided in several ethnic and linguistic groups and they are known for complex social structures, jungle survival skills and discipline fighting.

Kachin cuisine borrows from many of their neighbors, but utilizes plants and animals from the jungle, snakes, monkeys, crows and even tiger were traditionally consumed.

I made two dishes for this brief excursion into Kachin cuisine:
