Not many cities in America have a distinct cuisine - or even more than a couple of dishes they can claim ownership to - but Kansas City is one of them. While its cuisine is definitely mid-westerner, it has given birth to a number of dishes, some of which - most famously its barbecue sauce have been adopted nationally.

Kansas City's most famous dish is probably burnt ends, a dish made from the ends of smoked briskets that were given away free at bars in the city. I've had something similar at food trucks in the past and enjoyed them, but it wasn't a dish practical for me to make. It's almost impossible to find brisket in supermarkets here in the Bay Area, unless we are close to Hanukkah or Passover. Instead, this is what I made:
