Khuzestan is a region/province in south-western Iran which was for millennia the home of the Elamite people, one of the major civilizations of the ancient world. They were conquered by the Assyrians in the 7th century BCE, and later fell to the Medes, Persians and Arabs. For centuries, it's been the home to multiple ethnic groups and this heterogeneity has contributed to a unique cuisine with heavy Persian and Arab influences. Seafood features prominently in Khuzestani cuisine and I made two of the most traditional and famous dishes:
