Latvian cuisine is a "meat and potatoes" cuisine, one where the meat is usually pork - though sometimes fish, as it's a coastal country. Latvians are particularly passionate about mushrooms, which they forage in their forests, and favor simple preparations.
I was quite happy, however, with the Latvian dishes I made. They were all familiar - this mostly as I tend to favor recipes that I think I will like -, but they had twists, sometimes as simple as the use of sour cream, that made them particularly pleasant.
