Bzaar and Baharat Spice Mixes


Spice mixes are very popular throughout the Arab world. People make them at home, each with their own particular variation and thus you will find recipes with slightly different proportions, but they are also sold pre-mixed at the colorful spice shops in the markets that define the whole of the Middle East. Some of these mixes have achieved national popularity while others have broken borders and become popular internationally.

Baharat or 7-spices, is an example of the latter. This Lebanese spice mix is used throughout the Arab world and it's now widely available in the US, at least online. It's easy to make at home, of course, as it includes spices most home cooks are likely to keep around.

Bzaar, Libya's most popular spice mix, builds upon baharat by adding turmeric and caraway seeds. Every Libyan cook keeps it at home, but you can also make it easily at home - and then use those caraway seeds for this addictive Estonian cake.

Baharat Spice Mix

Makes 4 teaspoons

Ingredients

  • 1 tsp ground black pepper
  • 1 tsp ground cumin
  • 1/2 tsp ground ginger
  • 1/2 tsp ground cloves
  • 1/2 tsp ground coriander
  • 1/4 tsp ground cardamon
  • 1/4 tsp ground nutmeg

Directions Mix all spices together

Bzaar Spice Mix

Makes 1 Tablespoon

Ingredients

  • 1 1/4 tsp turmeric
  • 3/4 tsp ground caraway seeds
  • 1/2 tsp baharat spice mix
  • 1/2 tsp coriander
