Bug Spread

Gorgonzola Cheese Spread


This cheese spread is absolutely delicious and was a hit at the party. The dark raisins kind of resemble insects, so I called it "bug spread" but don't let that deter you from making it - it's good for any occasion.

I based my recipe in the Cabrales Cheese Spread I made for my Asturian dinner but I substituted ingredients I had at home. Feel free to do the same and use any blue cheese, sweet wine, nuts and fruits you like. I served it with sliced French bread.

Gorgonzola Cheese Spread

Ingredients

  • 1 tbsp. Marsala wine
  • 4 tsp. raisins
  • 4 oz. Gorgonzola cheese, crumbled
  • 6 tbsp. or more whipping cream
  • 4 tbsp. apple, finely chopped
  • 2 tbsp. slivered almonds

    Instructions

    Soak raisins in Marsala wine for 20 minutes. Drain and reserve both the raisins and Marsala. Mix the cheese, cream and sherry. Mash until it becomes a semi-smooth paste, adding more cream if necessary. Add raisins, apple, and almonds. Mix well.
