Gladys' Chocolate Nut Cake



I haven't made this cake yet, but it sounds quite delicious - if a little complicated. You will need two or three separate electric mixer's bowls.

Ingredients

  • 1 cup chopped nuts
  • 2 1/2 cups flour
  • 2 cups sugar
  • 4 tsp. baking powder
  • 1 tsp. salt
  • 1 1/2 cup milk
  • 1 1/2 tsp. vanilla extract
  • 1 1/3 cup butter, room temperature
  • 4 eggs, separated
  • 2 oz chocolate, grated
  • 1/4 cup water
  • 2 cups confectioner's sugar

Directions

Preheat oven to 350F

Butter two round 9" layer pans.

Put nuts on the bottom of the layer pans.

Sift together the flour, 1 1/2 cup sugar , baking powder and salt. Add milk, 1 tsp. vanilla extract and 2/3 cup butter and beat in the slow setting of an electric mixer for 1 1/2 minutes. Add egg whites and beat for 1 1/2 minute more.

Combine the chocolate, 1/2 cup sugar and the water in a double boiler. Put over low heat and cook, stirring constantly, until smooth and thick. Take off the heat, pour into the mixing bowl of an electric mixer, and add 4 egg yolks. Beat thoroughly and let cool.

In a separate mixing bowl, combine 1/2 cup butter with 1/2 tsp. vanilla extract. Add slowly 2 cups of confectioners' sugar, mixing constantly until combined. Add 2/3 of this mixture to the chocolate mixture, reserve 1/3 for decoration.

Pour 1/4 of the batter into each baking pan. Carefully cover with the chocolate mixture, half into each pan. Cover with the rest of the batter, trying to not disturb the chocolate.

Place in the oven and bake for 40 minutes. Let cool for 15' before taking out of the pans. Decorate with the reserved confectioners' sugar mixture.
