Uncle Frank was Granny's younger, single brother. Gladys was very close to him, but he died before I was born.

You can make a chocolate or coconut version of this cake. For coconut, just add coconut to the batter - I'd guess about 1/2 cup. You can also make this into a chocolate cake, but the recipe doesn't say how much more milk and butter to add.

Ingredients

• 2 cups flour
• 3 tsp. baking powder
• 1 tsp. salt
• 1 1/2 cups sugar
• 1/2 cup butter
• 1 scant cup milk
• 1 tsp. vanilla extract
• 2 eggs

Directions

Preheat oven to 350F. Butter two 8-9" cake pans.

Combine dry ingredients. Put in the bowl of an electric mixer and add butter, milk and vanilla extract. Beat on medium speed for 2 minutes. Add the eggs and beat for 2 more minutes, scraping the sides of the bowl as needed.

Pour batter into pans and bake for 30-35 minutes. Let cool and frost with chocolate frosting.
