Belize is a mixed bird, an English-speaking country with a large black population located in Central America. As one could expect, its food shows elements of both Central American and Caribbean cuisines. As in the Caribbean, Belizeans don't rely much on fresh fruits and vegetables other than plantains.
The menu I came up with would be at home in any Caribbean island. Unfortunately it wasn't very succesful and I wasn't thrilled by any of the dishes I made. Whether that reflects the recipes I found, my personal techinques or Belizean food in general, I can't say.
