The beautiful island of Cyprus has a rich history starting in the mythical times when the Greek gods were born. Its population is mostly of Greek origin, but the island suffered conquest after conquest throughout its history, most recently by the British and Turks. Its varied history has had an influence in its cuisine, which has Greek and Ottoman roots but also shows influence from Arab, Italian, French and English cuisines. Its dishes, while Mediterranean in spirit, are nationalistically Cypriot. Despite the richness of Cypriot cuisine, I only found recipes for a handful of dishes and cooked those that most appeal to me.
