Cucumber and Peanut salad
This is a very quick and easy side dish. Unfortunately, I can't say how good it is. As I don't eat cucumbers myself, I had my daughter taste it and we ended up adding too much lime juice, completely obliterating the flavor of the cucumbers. I may try it again with a different taster.
Cucumber and Peanut salad
Ingredients
- 2 cucumbers
- 1/2 cup roasted unsalted peanuts, roughly chopped
- 1/4 cup cilantro, roughly chopped
- 1/2 tsp salt
- 1-4 Tbsp. lime juice
Directions
Peel the cucumbers and cut them into triangular chunks. In a salad bowl, toss together cucumbers, peanuts, cilantro and salt. Mix in lime juice, a tablespoon at the time, until it has the right degree of sourness. Adjust salt if necessary.
