Galayet Bandora
Fried Tomatoes with Onions
This is a vegan recipe.
Galayet Bandora is Jordan's version of Shakshouka. For some reason, maybe I undercooked it, it didn't achieve the umami goodness of shakshouka and it was just OK.
Galayet Bandora
Ingredients
- 2 Tbsp olive oil
- 1 yellow onion, finely chopped
- 5 tomatoes, diced
- 1 serrano chile, seeded and chopped (optional)
- salt & pepper to taste
- pita bread for serving
Directions
Heat oil over medium-high heat in a frying pan. Add the onion and saute until soft. Add the tomatoes and chile, lower the heat to a simmer, and cook until tomatoes are soft. Add salt and pepper to taste. Serve with warmed pita bread.
