I wanted to make a traditional Hanukkah dish for my party, and nothing seemed to be more traditional (or easy to serve at a party) that latkes. Cheese latkes, while seemingly a new innovation, are thought to be even more "traditional". In any case, I decided to make these ricotta cheese latkes, as they seemed very easy to make. They were, and people ate them all up. Serve them with apple sauce.
Ricotta Latkes
Ingredients
1 lb Ricotta Cheese 4 eggs 6 tbsp flour 2 tbsp. melted butter 4 tbsp. sugar 1 tsp. vanilla Instructions
Blend all ingredients (using a blender or food processor) until the batter is very smooth. Heat a griddle and lightly grease it with butter, oil or vegetable spray. Spoon 2 tbsp. of batter onto griddle for each latke. Cook until latke starts to bubble, turn and cook until done.
