Fattoush

Bread Salad


Fattoush, a delicious peasant salad, is a specialty of Syria though it's eaten throughout the Levant. Not surprisingly there are several recipes for this salad, most rather similar though they vary on some ingredients. The version I made was very good except for the fact that I used too much onions and garlic, when you prepare it you may want to cut the scallions and garlic in half.

Ingredients

  • 1 large pita bread or 2 small pita breads, toasted and broken into small pieces
  • 1 cucumber, diced
  • 1/2 red bell pepper, diced
  • 2 tomatoes, diced
  • 1 bunch scallions, chopped
  • 2 tbsp. chopped parsley
  • 2 tbsp. chopped mint
  • 3 tbsp. chopped cilantro
  • 6 leaves Romaine lettuce, shredded
  • 2 cloves garlic, crushed
  • salt and pepper to taste
  • juice 1 large lemon
  • 5 tbsp. olive oil

    Instructions

    Combine all ingredients. Serve.
