Fattoush, a delicious peasant salad, is a specialty of Syria though it's eaten throughout the Levant. Not surprisingly there are several recipes for this salad, most rather similar though they vary on some ingredients. The version I made was very good except for the fact that I used too much onions and garlic, when you prepare it you may want to cut the scallions and garlic in half.

Ingredients
1 large pita bread or 2 small pita breads, toasted and broken into small pieces 1 cucumber, diced 1/2 red bell pepper, diced 2 tomatoes, diced 1 bunch scallions, chopped 2 tbsp. chopped parsley 2 tbsp. chopped mint 3 tbsp. chopped cilantro 6 leaves Romaine lettuce, shredded 2 cloves garlic, crushed salt and pepper to taste juice 1 large lemon 5 tbsp. olive oil Instructions
Combine all ingredients. Serve.
